    Lots of carrots and parsnips give old-favorite chicken noodle soup a sweet savor. To balance this effect, use the optional parsley, which is just slightly bitter - or maybe cilantro

    This is a version of the Mexican dish Pasole that I have lightened up a bit by using chicken instead of the traditional pork roast. It has a flavor similar to chicken enchiladas, but as a soup.     This is one of those recipes that you start to make early on in the day and simmer all day, for the best flavor. Make this on a chilly day and it will warm you from head to toe. Freeze any leftovers; pull out and thaw when you get that nasty winter cold or just need a quick lunch or dinner. Even though the title states "pot pie" noodle, bow tie noodles have always been used in this soup; something I grew up with. When my mom cooks it, she will sometimes add some thin sliced diced celery and/or a peeled, whole onion to the pot, just for taste, and removes the onion prior to serving.

I had a lot of leftover veggies and some frozen cooked chicken and I came up with this. If you like a soup with lots of noodles and a lot of chicken, this might be what you are hunting for.     We had our friends Masako and her husband from my hometown in Japan as guests for about 6 weeks last year. We toured the US - mostly the East Coast and the Southwest showing them all the fabulous sights. During our touring, Masako was introduced to potato and corn chowder and from that point on, every place we stopped she would ask me if the restaurant had corn and potato chowder. Knowing how much she loved this chowder, I knew exactly what I was going to make for her upon our return home. My favorite corn and potato chowder from one of the best places to eat bbq - Dinosaur BBQ in Syracuse and Rochester, NY. We try to eat there anytime we are nearby visiting my nephew - the food is great, but I just love their cookbook. Every recipe I've tried from the book is sooo good! This recipe is not the exact copy from the book, but very close to it. This chowder will thicken if you refrigerate and may need to be thinned out by adding some water to your taste. Alternatively, if you prefer for dietary reason, you can substitute milk for half-and-half.

    This is a wonderful fall or winter comfort food. The recipe can use either cauliflower or broccoli. UPDATE: I need to mention that I usually reserve some of the cauliflower pieces on the side before I blend, so I get a mixture of creaminess as well as some chunky pieces as an end result. You may want to try this.
