I soak and cook my own chick peas for economy. Timings do not include soaking and cooking the chick peas.
I do not remember where I got this recipe but I've been making it for years. Sometimes I use rice and sometimes noodles, depending on the mood I'm in... or what I have in the pantry! :)
This recipe makes the ultimate chicken broth... so rich and satisfying. Never had anything but sincere compliments on this soup... which, with a hunk of fresh bread, makes a wonderful supper. Number of servings is a guess-timate.
Do you like that warm comfy feeling? Try this on a cold day or night. This recipe can be doubled or tripled. I double using my slow cooker. I use leftover roasted corn from summer cookouts, just remove from cob and freeze. Gives a nice smoky flavor to soup. Grilled chicken works well too.
A bowl of this chowder can make for a whole meal.....it also makes a large stock pot full, so there is always plenty of extra left for lunches or to freeze. We have tried it with unsweetened soy milk (instead of the half & half) and it came out just as good!
Recipe from Reams Noodles but I added more veggies. This is soo good! It is similar to Panera breads creamy chicken noodle. The kids liked it too. I make some and freeze the uneaten in separate bowls so I have a quick lunch.
This sure beats the old Campbells can of chicken noodle soup. You can adjust the amount of water you start with to make it more or less soupy. Just a cup either way makes a pretty big difference. If you haven't had chicken noodle over the mashed potatoes, trust me it's great. I like mashed potatoes with the peels, but in this recipe it's better without. Enjoy!
This is a refinement of a recipe I created when my boyfriend was sick, and I wanted to make chicken noodle soup from what we had on hand. For the authentic poor college student version - use 1 can of Swanson's chicken broth + 1 cup water, and a brick of ramen noodles. I get nostalgic just thinking about it.
But I like this version better.
