A great recipe, even though it may sound a little strange to make muffins with tuna! My kids loved these a lot when they were little. Really easy to throw in a lunch bag too! Also, you may want to add peppers when you add the tomatoes to the beef. Serve this with the crunchy veggies listed to catch the sauce and add some cold crunch to your hot burritos. NOTE: this is a big meal and might be too much for some people. My DH and I were hungry and ate our 2 burritos but our DS's could only eat 1 1/2 and were stuffed. Enjoy!
An easy way to have a great meal and a great smelling house as it cooks while you are out. I have used half frozen chops in a pinch by just briefly defrosting in the microwave. The sauce is great if you make it the night before but is almost as good made the day of - just don't forget the smoke to give it a great BBQ flavour. You can also brown the chops the night before so you only have to spend 1 minute getting your chops ready to go in the crock pot the day that you are cooking. I like to serve these chops over rice with veggies on the side. I'm sure that this would work great with a pork roast or tenderloin, beef or chicken. Enjoy!

If you don't have green onions (they do add a great flavour), or your kids pick out the green pieces, you can substitute them with 1/2 medium onion, chopped. A delicious and easy pasta dish that you can substitute chicken for the shrimp if you are not a fan. You can also use a different shape of pasta, but linguine is nice. The optional ingredients are really good but you can omit if you can't stand a little heat. If I use all those ingredients, I find it a little hot, so I add about 1/2 cup half and half cream. The fat content in this creamy meal is nice and low. This is a dish that my kids always eat every last bite of! Serve with a salad to balance out the meal. This dish is similar to one I ate at Shoney's. It makes a great holiday dish. Minimal prep time and no cooking time, but it does need to marinate overnight to taste best. Bananas shouldn't be overly ripe. you can add more bananas to the juice as you eat them .
