Meatless but very flavorful. This is hard-core comfort food! Also very easy to make. Adapted from "Fresh from the Vegetarian Slow Cooker" by Robin Robinson. Serve with your favorite salsa, and a dab of sour cream, if you like. Like many reviewers, I don't particularly like the topping, so I substitute another cornbread made from another recipe, or from 1 box of Jiffy cornbread mix.

    Recipe #217787

Inspired by the flavors of North Africa, this vegetarian stew replaces the tagine with the crock pot. The combination of saffron, ginger and cinnamon give of a wonderful aroma and flavor. It would tempting to substitute canned chickpeas here but you will get a different result. In this dish the chickpeas while tender have greater firmness than the canned type. Time saving tip: Prepare the ingredients the night before, placing the cubed squash, carrots, onions, tomato paste, garlic and ginger in one sealable bag or covered container, the lentils and dried spices in another. In the morning add the contents of both bags/containers, the soaked chickpeas and broth to your crock pot, turn it on and go.

The dumplings do remarkably well in the crockpot. No one evens misses the meat! It's a full bodied vegetarian meal. You can even make it without the dumplings on top. Just grate parmesan, sprinkle and serve.

    Recipe #209714

This gluten recipe is very versatile, so you can swap different oils and different herbs, such as oregano or basil. For thicker gluten, try adding a teaspoon of tahini. You can also use different chili pastes for the barbecue sauce or simply leave out the chili paste entirely. Adapted from Jason Wyrick, courtesy of GoVeg!

This is a thick, delicious vegetarian soup. Enjoy it on a cold night. You can use squash instead of sweet potatoes if you want.

    Recipe #52519

This soup is really yummy and healthy too! This makes a main dish accompanied by tortillas, or crusty french bread and a nice salad!Caribbean, Cuban, Mexican and Spanish influences! It really is best if the beans are soaked overnight. And depending on your cooker, the soup might need to be cooked longer.

In college, choosing macaroni and cheese or juniorettes is always a first choice- But sometimes, it just doesn't cut it. Home cooked meals are very necessary every once in awhile, as you may know. Slow cooker recipes are great in apartments, especially when space is limited to prepare a feast. This takes only minutes to prepare, then let it cook while you study or rest for 2 1/2 hours. *Note: Veggie crumbles are a heat and serve vegetarian meat substitute- If you don't want this to be vegetarian, you can substitute 8 ounces ground beef, browned, for the crumbles.

I like to have this with barbecue, cornbread, and sweet potato casserole. Using the crockpot keeps the house cool in the summer, when I do most of my grilling, but this recipe is good anytime.

A hearty lentil soup taking its influence from the flavors of India and the Mediterranean coast.

An authentic German recipe adapted from Mimi's cyber kitchen. The original said to cook on stove top 6 hours, but I have adapted it to the crock pot.

This is copied from "Not Your Mother's Slow Cooker Cookbook" and it is made in 2 parts. I haven't tried it yet. You could add butter, salt and pepper to the crock baked beets if you like and not make the viniagrette. It seems like an easy way to "bake" beets. *You need foil to wrap the beets.

From the cookbook The 150 Best Slow Cooker Recipes this is a lovely full flavored dish that will greet you after slaving all day in the kitchen(the crockpot, not you)! This is a native American dish.

I love polenta. Like it fried with maple syrup for breakfast. Like it with lemon pepper & a bit of butter, oh I could go on and on. But making it on the stove top was always plop plop burn burn, this way I'm safe.

Modified version of a recipe from the Weight Watchers website. It's easy, delicious, nutritious, filling, and ZERO points!

    Recipe #184846

From a cookbook called "Best Loved Slow Cooker Recipes," this soup tastes very similar to French onion soup, but the cheese is mixed right in. I've had a little trouble in the past with the cheese and milk curdling, so I turn my slow cooker off and let the soup cool a little before adding. *Update Sept 22/06: Try adding a pound of smoked sausage and 2 diced potatoes for a heartier version.

This is one of those healthy vegetarian dishes I used to live on in the '80's during my health and fitness stage. Too bad I didn't stick with it. Still this is a great recipe and I have enjoyed it many times with several variations (Note: I'm guessing on the serving size...don't have that written down anywhere)

    Recipe #33490

This is a great vegetarian dish! You may add frozen meatless crumbles in place of or in addition to the feta cheese. You can assemble this the night before to get a good head start on the next day's dinner! Adapted from Cooking Light magazine.

    Recipe #164916

An easy and delicious breakfast, lunch, or dinner! Add a little pinch of cayenne for a kick! From the Cabot cheese folks!
