I've been making these for years. I love it when I have leftover chicken, so I get to make these! I've also made them with leftover turkey. Ingredient amounts are approximate. Feel free to adjust to your liking!

My sister Shawn is famous for these enchiladas, and her husband Rob makes the killer margaritas to match. My husband and I like them with Sangria. It's the ideal entree for dinner guests because it can be completely prepared in advance. You can substitute whatever meat you have...ground chicken or turkey, steak, shredded pork, Krab, etc. as well as any creamed soups. I was even out of sour cream and substituted fat free cottage cheese which worked fine. Be creative and please share your ideas here!

Recipe #164392

A recipe from nutritionist Tara Gidus.

Recipe #283357

Inspired by my favorite appetizer at the Chili's restaurant chain but these are baked, not fried. Two full egg rolls per person makes a nice dinner for T.V. night. For a dinner party you can also cut them in thick slices sushi-style. These can be frozen before they're cooked or afterwards.

Recipe #283090

Also from Chef Rick Bayless, this is similar to Recipe#201814, but uses pumpkin seeds. YUM! Serve with chips, crackers or toasted bread.

Recipe #308711

Using queso as a base, you don't need sauce or cheese - so here's a quick, easy dinner without many ingredients! The queso used in the original Pace Foods recipe (Pace Mexican Four Cheese Salsa con Queso) is spicy and flavorful, so if yours is plain you may want to jazz up your toppings with chopped jalapenos, diced green chilis, black olives or red pepper flakes. The original recipe called for basil which competed with the queso, but some fresh cilantro added at the end would be nice. The original recipe called for sun dried tomatoes; the second time we made it, we used roasted red peppers instead, and thought they were better.
