This is some really good stuff! My cousin, an avid fisherman, came up with this twist on Waldorf salad. I believe that he uses mackerel in his version, but mac is a bit too fishy for me. Smoked fish would be also excellent in this. Curry powder, ground cumin, chili powder, ancho or cayenne pepper may be added to heat it up and offset the sweetness. Raisins may be added to reinforce the sweetness. Sour cream or yogurt can be substituted for some or all of the salad dressing or mayonnaise. My cousin likes larger chunks in his salad, but I prefer a finer dice on the celery.

This is a fantastic main dish perfect for those hot summer days when a light, cool meal sounds good. I make the day before to let the flavors blend.

This is a lovely salad that can be added to as you desire. I got this from a olive oil recipe site. Enjoy!

A tasty salad which is well received on a hot day. Cooking time is actually time to allow to chill in refrigerator.

This is one of my favorite standby recipes that I've been making for over 30 years. I have absolutely no idea where it originally came from. This is really good for those nights when different family members have different eating schedules. It's very "adjustable" and you can add, change, or omit any of the ingredients listed. Cook time listed is the chilling time.

This makes a wonderful luncheon salad or a first course for a dinner party. The amount of ingredients you can put on a plate is limited by the size of the plate. The following recipe is for 1 serving, however, just multipy the ingredients for additional servings.

My guests are always pleasantly surprised at the remarkably delicious combination of flavors - simple, but impressive. The quantities listed are for 2, but doubling is easy.

WOW, when I can get crab on sale and in season, I love to make this delish appetizer for our friends and family. It is tasty and elegant. Serve on a pretty platter for great presentation. Can be made ahead and chilled.

I adapted this recipe from one I found in a cookbook. It is not only healthy, it is delicious! Perfect to take to the office for lunch, or just to snack on at home with crackers.

Recipe #27279

This is one of our favorite summer salads- it makes a lovely "light" dinner meal and you don't have to heat up the kitchen! I've also used a combination of red, green and yellow bell peppers to add more color to the salad. Prep time does not include marinating time. Originally from "Savor the Southwest" cookbook.

This great salad can be an entire meal... if you're not that hungry or feel like something light, or as part of a salad bar, or wherever it suites you... Very easy to prepare and tastes yummy!

Great cold meal for summer, or to bring to a get together. Low fat, and DELICIOUS! This is a recipe I've found different variations of in a couple of magazines. Prep time depends on if you need to cook the pasta. Feel free to change amounts to suit your taste or according to what's in your frig. (Beware...make extra...I eat a serving,at least, as soon as it's mixed. Yummy!)

Very good luncheon or even light dinner on hot summer days.

Found this in Islands magazine.

This is a very different and delicious salad. I know it sounds strange, but try it, I think you will be pleasantly surprised. This is from our Church cookbook. Serving amount is a guess as it depends on if you are serving this as a main meal or a side.

I created this recipe because I wanted something different. I was tired of the same old generic tuna salad and wanted something fairly healthy and cold for dinner on a hot summer evening. So here it is, enjoy!

Recipe #101607

Especially well suited for summertime entertaining-- I like to prepare this creamy chilled seafood pasta salad in the morning, refrigerate, and serve to guests in the evening outside on the patio accompanied with a crusty baguette, butter, and a good bottle of white wine! Be sure to serve this salad well-chilled.

I've had this recipe forever; it was an instant hit the first time I made it, and now my daughter makes it for her family. If you are not a salmon fan, I imagine you could substitute tuna----but it is so tasty with the salmon, I've never had to alter it.It is great for picnics or family gatherings.

Recipe #132492

One day I was craving tuna salad but not the usual, so I borrowed some Mediterranean flavors and created this mayo-less tuna salad. It's good in a pita or stuffed into a tomato shell; and it keeps really well.
