This salad is wonderful! My husband and I came up with the ingredients for the salad itself to go along with a delicious maple dressing from the book "What's cooking America". All the flavors of the different ingredients blend and coalesce into the most mellow, nutty sweet flavor, that is very autumnal and heavenly! And very nutritious too. You really need all the ingreds. to achieve the wonderful flavor. Make sure you toast the pecans, as the toasting really brings out the flavor, and let the jicama matchsticks sit in the ice water a bit to really intensify their crunchy sweetness.Make sure all the ingredients are very fresh. (I buy prewashed/packaged baby spinach to speed things up and dispense with the rinsing and drying). Vary salad ingredient amounts to taste (we never measure). I hope you enjoy it as much as we have.
This recipe only take a couple of minutes to cook - You just want to wilt the spinach - the cinnamon orange gives a nice flavor to the spinach. You do not need a dressing - serve this as a side dish or a salad
This meal sized salad has a BEAUTIFUL presentation. Egg and cottage cheese provide protein, while the lettuce and many vegetables create a light, yet filling, meal. The amounts of lettuce and vegetables is an estimate. Just use as much as you want. Also, use the vegetables you prefer.
Spinach and strawberries what an odd combination for a recipe. That is what I thought before trying this the first time. Now I get many requests to bring this for dinner parties. The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.

Wow, this has replaced my favourite Caesar Salad for popularity when people ask me to bring salad. It is really tasty. I have about 8 people to Sunday dinner each week and when I make this I have to double it and it all goes. When you double the salad ingredients you do not have to double the dressing. Just toss more.
This is fantastic. I've been trying to eat more healthily and so I have been trying to give up olive oil. Not easy. And I *know* it's a good fat, but I don't need ANY fat right now! So the inclusion of tofu in the dressing makes this taste more "sinful" than it really is.
