My guacamole is very free-form, but here are the basics: Figure about 1/2 large avocado per person. I don't care whether I'm using Haas or regular avocados - some people do. Pick ones that give to mild pressure but are not mushy. If you can't find any that are ripe, get hard ones and keep them in a paper bag for a couple of days until they ripen.

Recipe #2708

This is a fantastic appetizer and, like all my favourite recipes, ridiculously easy.

Recipe #67949

This is a simple appetizer that is meant to be eaten at leisure with friends! You can make crostini out of day old bread, and you can use any flavor of bread you like, but don't make them too far ahead, they are best served warm. Cook time is marinating time. From Cooking with Caprial cookbook.

Recipe #118191

I found this recipe on the back of a Blueberry Almond Cereal Box (Kroger brand) and modified it and my husband loves them!

Recipe #96364

A lovely combination of spices and the chicken is beautifully tender and moist. This was a recipe from a supermaket promotion, which I have slightly adapted to my own tastes. Very rich, so we do not have it too often! Served over rice and with a fresh salad to counteract the richness. A few have commented that they were not so fond of the cinnamon in this dish, and so another spice combination that is good is to leave out the cinnamon and ginger and replace with 1 teaspoon each of nutmeg and cumin.

This is an option for anyone who loves banana bread and mufffins, but not the fat and calories that usually go with them.

Recipe #97907

Very soft decadent, yet low-fat cupcakes. These do not contain egg and can easily be made vegan. Un-iced, they are still extremely good cake-like muffins. NOTE: these cupcakes had a VERY mild citrus flavour. I have since added orange zest to the recipe for a more prevalent citrusy flavour.

Recipe #121724

I love burghul (cracked wheat) in falafel. These are delicious as a pita bread filling with tabbouleh and hommous. Prep time does not include soaking for the chickpeas or bulghur.

Recipe #114320

I fell in love with green chile sauce while visiting New Mexico in the early 90's. Since I live in Dallas, Texas it is very hard to find anything other than tomato based salsa. So I created my own version to enjoy anytime.

This is a vegetarian main dish that can be frozen and reheated in your microwave for a quick healthy alternative to the freezer section variety in your grocery.
