This is amazingly good! It's perfect for a special occasion (like Valentine's Day) or when you just have to have something sweet and yummy in a hurry. There's no baking or complicated stuff so you can literally put this on the table within a few minutes. I top mine with strawberry topping but you can use any flavor you like. It can be made with sugar, splenda or even stevia. You can used regular or reduced fat cream cheese. I use reduced and splenda. It will actually serve up to 4 adults if you really want to share it.

The original recipe is old, very rich, and very high in fat/cholesterol. It was made with heavy cream. Although this adaption still is rich and not low fat by any means, it is lower than the original. I tried substituting something other than butter, but it just didn't give it the "right" taste. Please note the whipping cream is the stuff used to make homemade whipped cream. It is not the stuff in the tub or spray container.

About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. Yup...another recipe from an old issue of "Vanidades"...lol! Old mags can be soo helpful sometimes! ;) The good thing about quesadillas is that they are soooooo versatile and flexible for cooking! They are sooo NOT time consuming and great when making breakfast for hungry ppl or short on time!!!
