I've had a number of cranberry mincemeat pie recipes over the years, & this is one I've worked on over the past 25 years or so. In a a pinch, I've substituted 3 cups of canned whole-berry cranberry sauce for the first 4 ingredients.
I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.
The thing with meyer lemons is that they're much less bitter than regular lemons. They're cross-bred with mandarin oranges, so you get all the citrus in a much milder form. I'm not usually a fan of lemon anything but these are just irresistibly luscious.
This recipe is for a double crust pie that I got off of the Food Network. It is similar to a peach pie but more luscious because of the mangoes. I suppose this could also be made with peaches but try it with mangoes for a real treat.
Before Cool Whip and instant pudding, this was how a cream pie was made. If you leave out the bananas, you have vanilla cream pie. If you add 1 cup shredded coconut to milk as it's being heated, you have coconut cream pie.
This is quite possibly the most amazingly easy and wonderful dessert that I make to date--that EVERYONE goes nuts over. I have never had a bad review yet! It's simply perfect served warm over homemade vanilla ice cream--wonderful Christmas dessert!
Received this lovely recipe in an email from gourmet_recipes_from_around_the_world ( thank you Bjorn Holstrom). Prunes with pits intact are becoming difficult to find in the litigious US. Pity as the pits have a delicate almond-like essence to their kernels. Using hot water to plump the prunes will decrease the 12 hour (interpret as overnight in my book) soaking time as will using pitted prunes (which can melt if let to soak beyond 15 to 30 minutes in hot water).
I love the use of canned almond paste in this recipe - use your favorite crust if this one seems a bit spartan. I certainly would use chilled fat of choice & chill whatever dough I was using after shaping into a round - seems to yield a better crsut.
