    I was the lucky winner of RSC #5 and hosted RSC #6. Sixty five chefs created 190 recipes using at least 5 ingredients from a list of 15. There are some wonderful creations in this collection and I hope you try many of these recipes. Evelyn/athens won RSC #6 with her recipe for Zesto Pesto. Congrats to her & all of the finalists! I had a blast being the contest director and want to thank everyone who entered, played the Food, Friends, & Fun game, and/or reviewed contest recipes. You made this such a wonderful experience! I also owe Bergy a huge thank you for all of her encouragement and support. My hat is off to you all!!! =) The Global Apron project came from suggestions during the contest. It sounded like fun so the apron's journey began. The apron traveled the world passing from chef to chef for over a year. Each chef signed it, attached a keepsake, and at her own expense mailed it to the next person on the list. The apron was intended to go to the winner of RSC #6, evelyn/athens. She presented the apron to me. I am still overjoyed, overwhelmed, and deeply touched. It is one of my dearest treasures and I thank everyone who participated. You guys ARE the best!!!

    Mushroom risotto is one of my favorite dishes. The addtion of the cashews gives this just a slight crunch and really compliments the flavor. Don't let the thought of making risotto scare you, it does take a little time and attention, but it really is easy and not all THAT time consuming. It's a great accompaniment to an oven baked main dish, so that you don't have to worry about other stove top dishes.

    A yummy filling of chicken, mushrooms, spinach, bacon and cheeses, layered between buttery-crisp sheets of phyllo. This recipe will make one 15 x 9 inch pan, which will serve 10-12 happy people, or two 8 x 8 inch pans, so you can bake one, and freeze the other (unbaked) to enjoy at a later date when time is short and good food is a must! All your meat and veg in one tasty packet. Developed for RSC #6.

    Cashew Chicken Fingers With Curry Mayonnaise

    Crispy chicken fingers coated with cashews dipped in spicy curry mayonnaise - yum!! This will serve 4 person as an appetizer, although we did polish off everything between the both of us! NOTE: Measure the cashews before chopping them (I use the PULSE button on my Tefal grinder). I find it's easier to use a pair of chopsticks to roll the chicken in chopped nuts, then transfer to baking pan.

The original idea for this recipe comes from my Sushiman, who likes making up recipes on the spot but refuses to open his own account on Zaar and is perfectly happy to let me steal his limelight (and ideas).
