Totally delicious and refreshing, this creamy margarita cheesecake pie pairs beautifully with a spicy Mexican meal of tacos, enchiladas, rice and beans. My dad brought this recipe home from the Navy nearly 50 years ago. I have been making them since I could stand on a chair by the stove and stir. The peanut butter in this recipe makes these cookies a little different than similar recipes I've seen here.
I've been making this for years without a recipe, so when dale! asked me for the recipe, I had to stop and think. I also use the same mix (less lemon juice) for a pineapple cheesecake. You can add sugar, but I love the tart lemon flavour. If you like your base right up the side of the cheesecake, double the base mixture-I like more cake, less crumbs!
I got this recipe from my neighbor Lois when my girls were very small. They are 31 and 37 now and we still make this every Christmas, every bake sale and every time we want a fudgy tasting sweet. It is the most popular sweet I make.
