    My mother gave me this recipe. She found it while clipping coupons. It is from S&W. This is the best stew I have ever eaten and my family requests me to make it quite frequently. It has become a "comfort food" for us. Perfect to make if you have leftovers after baking a large turkey or chicken. Can be made vegetarian or vegan if desired.

    This is one of my signature dishes - I've been using it since the 80's. I found the recipe in one of the local supermarkets own cookbooks, used it to acclaim and it made me famous, with people I hardly knew actually coming up to me and asking me how to do it. (I come from a very backward town!) Very easy, very pretty and unusual and well worth the effort. Oh, and it tastes good, too. On one side of the plate you've got green watercress soup and the other an orange carrot soup.

    Wonderful stew, can be a vegetarian meal on its own. Or you can add some diced or shredded smoked duck, if you like meat. The red lentils break down, and cause this to be like a really rich soup. If you need to stretch this out, you can serve it over white rice, to do a sort of "beans and rice" thing.

    This is a surprisingly filling, vegetarian, crock pot soup. It is very good, and easy to prepare the night before, or chop the veggies in advance and turn it on before you leave for work in the morning. Goes great with a crusty bread.

    This a wonderful comfort food! My Italian husband and relatives love it. They can't believe I don't spend the whole day at the stove to make it. Serve with good Italian bread and a salad and your all set! I have included the microwave instructions, but I have never made it this way so...it's your choice. Try it you'll love it. If it's a little thick the next day for left-overs, just thin with a little Red Wine and Chicken broth. YUMMY!!!
