A hearty flavorful exotic bean and vegetable stew.

    Recipe #9999

This is a hearty soup loaded with healthy goodies. Could be a vegetarian soup--just leave out the meat. Plenty of protein and plenty of veggies. It is a one-dish meal along with some homemade bread and a salad.

Ever had this comfort soup in a restaurant? Tomatoes, onions and pasta--always a winning combination. This recipe is simple, affordable and fat free. Grandma made this popular homemade tomato soup in our family restaurant back in the 50's. Experiment with rice, parsley, leftovers, herbs, celery leaves, cheese or diced tomatoes. This recipe is better reheated and easy to double or triple!

These two soups are good. I especially like the Albondigas Soup. Albondigas Soup

I keep swearing to my husband that this is halfway healthy and decided to see what the nutritional value actually says. It is very good and not near as spicy as one might think. If you like it hotter, use spicy V8.

YUM!!! This is the best soup ever!!!!

    Recipe #145241

We serve this as a main dish - Greek meals are often meatless.

Quick, delicious homemade soup. Discovered this recipe in the Good Start magazine, when I was pregnant. Excellent source of calcium, nutrients and energy. We just love it!

    Recipe #56001

This hearty soup makes a great fall meal, served with a salad and some warm crusty bread (we usually have a whole wheat baguette), or use it as a first course. It is derived from a Pumpkin Soup recipe I found several years ago in The Wine Spectator. For a dressy presentation garnish with a bit of Creme Fraiche and some julienned prosciutto. I've made this recipe using brown sugar and also substituting Spenda and my family has not noticed a difference. I have also substituted low fat evaporated milk for the heavy cream with no issues in the final result. This soup can be prepared up to 24 hours before serving. re-heat over very low heat prior to serving.

I found this recipe listed in my local newspaper. I never liked anything pumpkin before this. The green apple really makes the soup flavorful.

FOUND IT. This recipe is from the book Apples to Zucchini: A Collection of Low Protein Recipes by Virginia Schuett and Dorothy Corry I adopted 9/15/2007. I found the CC information on 2/21/2008 Recipe corrected.

I was given the recipe for this wonderful soup, along with a bag of bean mix (red kidney beans, romano beans, navy beans, green and red lentils, split green and yellow peas and pearl barley) by a very dear friend many years ago for Christmas! I have since made it many times. While not exactly a soup for summer, I have made it on occasion when I didn't know what else to cook. I eat soup all year round!

Stout makes the beef taste beefier in this chili. For best results, pick out a five-pound boneless chuck roast and have the butcher grind it for you. Recipe from Bon Appetit.

    Recipe #206214

This is a delicious Greek stew that I have adapted for the crock pot. The spices give it the characteristic Mediterranean flavour and the sauce is divine. The eggplant will be very soft, and some pieces may even have melted into the sauce. This is terrific served over a thick pasta, like penne or rigatoni.

When you are in the mood for soup but don't want to cook all day, try this one. It calls for lean beef cubes, carrots, celery, onions and a hint of tomato. Serve it with orzo pasta and topped with grated Italian cheese-very heart warming.

    Recipe #75708

Hearty, easy one dish meal that cooks itself while you're gone. Serve with salad and bread, and you have a whole meal.

    Recipe #30018

This is a great hearty soup - one of my hubby's favorites! Like most hearty soups, great with crusty bread.

This albondigas soup recipe was given to me from my mother-in-law. It's definitely one my favorite soups. Honestly, it's better than most restaurants that I've tried.

    Recipe #107281

I think this is our #1 all time family favorite and it's often requested for birthday dinners. It's the 'Bestest' because my daughter described it as such when she was little. This freezes well and I've added directions for that and for reheating.

    Recipe #56366

This is so tasty, and healthy too! We love black beans. Prep time does not include soaking and cooking the beans, but does include cooking the chicken. You can, of course, substitute canned beans, just drain them. The soup can also be frozen in a sturdy plastic container, or a ziploc bag. To serve, defrost and heat in microwave or on stovetop.
