For the RSC Cooking Contest. When I saw the list of ingredients and focused on dessert it became pretty obvious to me that I'd be making a cheesecake. This one's delicious! I watched the amount of sugar I added and the caramels contributed the rest. I decided to use just pecans in the crust - no cookies, and I'm really pleased with the result. Creamy, not too dense, with a pleasant nutty crunch. I think you're all going to enjoy this.
This is the best cheesecake I have ever made or eaten! I think the mascarpone is key and the balsamic strawberries is a must. It elevates this cheesecake to a different level. Recipe is from Wente Vineyards Restaurant in Livermore, California.
At age 96, our granny pasted away September 2001. She loved this cheesecake because it rises up high and is as light as a feather. She'd lovingly make it for every memeber of our family (because we all loved it) as a special birthday gift. She's gone, but her love and caring and cheesecake lives on!
A very simple, yet classy looking dessert to serve company - chocolatey cheesecake topped with a sweet sour cream topping drizzled with melted chocolate. I usually serve mine with some fresh raspberries as well as raspberry coulis and a sprig of mint. Cook time does not include several hours' or overnight chilling.

Several years ago, just after I had gotten married, I faced my first holiday dinner with the new family. I was told to bring a dessert, among several other items. I decided I wanted to make a cake and happened onto a recipe for Baileys Cheesecake. My husband is a huge fan of Baileys so I had plenty on hand. I made it and it was a huge hit. Since then, I make it every major holiday. I got an earfull one Thanksgiving because I had missed it. LOL. I had a baby the day before and never got it made. That recipe has since been modified and changed to suit my family's preferances.
Very pretty frosted like a cake with the top edge piped with a star tip. Found this recipe in a pack of recipes from Great American Home Baking. You can make the cheesecake up to 2 to 3 days in advance, frosting it the day you want to serve it.
WOW is this good! I found this recipe in an old cheesecake cookbook called "Cheesecake Madness" that I had purchased at a church rummage sale. I don't know why someone didn't want a book with a recipe this delicious in it. It is nice and thick, melts in your mouth, and forget about dieting...this cheesecake is chock full of diet-wrecking temptations!
