    If you like the "Turtle Candy" you'll love this cheesecake. I was able to attend a cooking show back in 1999 hosted by Chef John Folse and this is the recipe he demonstrated. If you like Louisiana cooking get his "Hot Beignets & Warm Boudoirs" cookbook. He traveled through all the B&B's in LA and out of hundreds some appear in his cookbook. There is also some marvelous history and pictures of plantation homes. My family loves this, very rich, but oh so good! I tweaked it a bit using chocolate graham crackers and lighter fare ingedients.

    I came up with this version of my creamy cheese cake just for the holidays! You can use extract instead of amaretto. You can also use any of the hard squashs as butternut or sweet potato thats been baked and mashed smooth.You can also bake in a water bath by adding 1/2 inch of water to pan. Be careful removing cake when cooked if there''s any water left.

    Got this fabulous recipe from Gourmet's 50th Anniversary issue. Gourmet recommends Scharffen Berger chocolate, if you can't find, substitute another high-quality bittersweet chocolate, I like Callebat. I usually buy Callebat mini chocolate chips and then I don't have to chop the chocolate. FYI...The cheescake must be chilled overnight. Enjoy!

    Elegant way to serve cheesecakes - makes 12 beautiful little mini cheesecakes! Delicious and low fat! You can't ask for anything more!! You can replace the ricotta by cottage cheese. If you only have large marshmallows, use scissors to cut into smaller pieces. Adapted from a R. Reisman recipe.

    This was originally published as a chocolate-mint cheesecake in Cooking Pleasures Magazine, but I don't like mint at all, so I just subbed almond extract for the mint. If you want a chocolate-mint one (or, for that matter, one made with any other extract), just sub in the extract at the appropriate time. NOTE: Cooking time includes cooking and cooling time to MAKE the cake, but does not include 6 hours refrigeration after all is done.
