Many sauces are Veloute with special seasonings. Good strong chicken stock makes all the difference.
Simple - omit cream and add 2 tbs flour. Vary 1/2 stock 1/2 wine. Allemande add 3 tbs parmesan. Lobster - use lobster stock and season with paprika and lemon, can add 2 egg yolks...serve over lobster. Olive and almond add .25 cup shredded toasted almonds and 8 pitted olives and lemon juice. Russian add chives, mustard and horseradish before cream and cook 2 minutes then lemon juice. Soubise boil 2 cups sliced onions 5 minutes, drain, puree and add to sauce. Mushroom add 1/4 cup sliced and cook 5 minutes.
This is a wonderful alternitive to real mayonnaise. I have been put on a strict diet and this saves the day! Makes a great salad dressing(I add a little honey), spread for sandwiches, or dip. Adapted from Raw and Living Foods.

Don’t throw those delicious fresh papaya seeds out! Make this wonderful dressing with them. :) I have also dried papaya seeds and used them chopped or crushed in recipes. They’re very good for the digestion and have a slight peppery flavor.
Taken from The Best International Recipe, posted for safekeeping. Extra-virgin olive oil is too strong; if you do not have regular olive oil, use equal parts extra-virgin olive oil and vegetable oil. Ground black pepper may be substituted for the black pepper, but white is not visible. Spread on sandwiches or dip with crudites.
