What could be more satisfying than coconut cake with a lemon filling? I personally thought the filling was a bit tart and would probably cut down the lemon juice/zest a bit next time as I felt the tartness was a bit overpowering. I loved the frosting. Warm or room temp. Since it is baked, green bananas ok. The original recipe was 5 c bananas and 3 cups mangoes. I have reversed that as it was too dry. I also increased the rum to 1/3 cup. Feel free to add other spices.
