    This is from 'Healthy Cooking For Two' and is easy to make and great tasting. Prep time includes the precooking of the dry beans. Do not boil the beans as this will tend to make them mushy.

If you don't feel like chopping the veggies, just pulse the onion, scalliions, carrots and garlic in a food processor until they are finely chopped, then add the tomatoes and pulse two or three times until chopped. Also, if you opt to use canned beans, simply add the bacon and veggies after they have been sauteed. *Time does not include overnight soaking and bean cooking*

    At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good. I didn't find one for the crock pot however, using dried beans and no hopefully this fits that bill for someone else out there! I found the recipe online - There are only a few things I tweaked, one being Bakon yeast. Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast & liquid smoke. Adjust the heat as you wish. NOTE: Soak the beans ahead of time (night before). The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. Hope you enjoy!

The recipe calls for dry beans, I use tinned, approx. 420gr size, and if I haven’t got black-eyed I use cannelli or borlotti or any smallish white bean; cuts down on cooking time This is a vegetarian dish intended as a main meal, but it makes a great side dish as well. A good variation is to add sautéed sliced mushrooms with the onions, and I usually add garlic as well. Its good served immediately, but if you refrigerate and heat the next day its even better.
