    This recipe may seem a bit time consuming for what seems to be a fairly basic sauce. But the reductions really concentrate the flavours and are well worth the effort. I've also used some white wine on occasion and it added another dimension to the dish. I like this dish served over a long pasta and served with garlic bread.

    This potato salad was one of my Nonna's (grandmother) most-loved recipes. Our whole family (and it's big!) loves it and we always think of her when we make it. It is simple while still being full of flavour. The salad is best served warm or room temperature. You don't absolutely have to love parsley to like this dish, but it would help a little. :-) Please note: amounts are approximate - my grandmother never wrote anything down, so we go by taste. Feel free to adjust to your own preferences.

    This is the best Alfredo sauce ever. This is several recipes combined into one. You can also add your choice of meat (chicken, shrimp or even crab). The closest OLIVE GARDEN is an hour away and I will never drive that far again just for Alfredo sauce. I promise this is the best sauce ever.     This delicious and quick recipe calls for "1 tube prepared polenta" - Many grocery stores carry pre-made polenta in tubes in the refrigerator section which can be sliced into rounds. If you don't have access to pre-made polenta or wish to make your own, I recommend following RecipeZaar "Recipe #45131" (omitting only the last step). Alternately, you can make polenta to your liking, spreading it on a baking sheet while still hot in a 1/4" layer, and cool it in the fridge for an hour or until firm, then use a juice glass to cut small disks out of the polenta.     I posted this in answer to a question and thought I should probably post it here as well. This is an absolutely delightful summer lunch or supper meal. It is one De Laurentiis grew up with. When she tasted it, she pronounced it "Just as I remembered!" Note that you can use any small tube-shaped pasta such as elbow macaroni or pennette in this recipe. Do not, however, substitute sliced-for- sandwiches mozzarella for the fresh which is totally different.
