    I just loooooove the combination of lime and fresh coriander. Mmmmmmmmmmmm. In this recipe from 'Delia Smith's Winter Collection', you've got it on top of the salmon as well as in the salsa. Of course you can only do the salmon or only the salsa, but the two go really well together. I served this with what we call here 'wild rice mix'. It's white long grain rice with pieces of wild rice in it. Marinating time is NOT included in the cooking time. The ingredients and in particular the salsa is very much like Tex-Mex cuisine.

Her original intro read: "Sumac has a tangy, citrusy flavor and is very nice with the salmon & balsamic vinegar in this recipe. A little bird told me about the virtues of sumac (ok, it was Chef Canary Girl!), and now I'm a big fan. This recipe came from a website called Global Gourmet. Prep time includes marinating time, and cooking time will depend on the thickness of your salmon, heat of your grill, etc."

    My Dads fiancee gave this recipe to me when we were visiting in England recently. I cooked this the other day using wild alaskan salmon(found in Walmart,can you believe!)     I can't wait to try this unique recipe. What could be better than salmon and peaches together? This is from Peach Perfect (Low Fat Recipes) by Sherri Eldridge. It doesn't specify the grill temperature, but I would go with medium to medium-high.
