A easy to make delicious salad and dressing. Recipe comes from Gourmet Magazine.
I ran out of spinach the other day, and so had my salad with 'just the toppings'. It was a nice change from the usual, and would work well with whatever ingredients you may have laying around.
Made in Minnesota in the Mediterranean Spirit for a company potluck.
This is the standard Palestinian salad -- they eat it with just about anything but especially to accompany and give colour to rice dishes -- it might take a little getting used to, but you'll get used to it!
Similar to a sandwich I used to get at a delightful little cafe in Dayton, Ohio called the Euro Bistro. Very light and great for warm weather and summertime eating! :)
