    I was introduced to pickling last year by a friend of mine. I then gave away the fruits of my labor as Christmas gifts. My family and friends loved these so much that I am now growing my own cucumbers and I need to pickle about 75 quarts this season to fill the demand!     This is a recipe by Beth Elon, who has a column every other week in our local paper. In our house it's just not Friday night dinner unless there's soup, but with the weather being so hot lately, I haven't been able to even bear the thought of sitting down to a hot steaming bowl of chicken soup, let alone cooking it on Friday. I tried this out the other night and it was so refreshing, I think we'll have this more often than just Friday nights during the summer! Prep time includes chilling (who wants lukewarm cuke soup?).

    This is such a delicious summertime salad, with a wonderful blend of flavors, I have served this quite often at my BBQ parties, and everyone just loves it, this can also be made in a glass baking dish, and just scooped out when served. If you are planning to mold this salad, I suggest to serve it on top of a bed of sliced cucumbers, it makes for a nice presention. I hope that you enjoy this as much as we do. Plan ahead this salad needs to chill until set. Prep time includes chilling time.

    I love these cucumbers. This recipe comes from 'A Spoonful of Ginger' by Nina Simonds who says that cucumbers eaten during the summer dissipate heat. They also are considered to have diuretic and laxative effects. I can't really attest to all that but I can tell you that these slices are really tasty.

    This is a great end of the summer treat. Use pickling cucumbers for this recipe and let them marinate for at least 4 days....the longer they sit the spicier and more garlicy they'll be. Plan ahead to account for the marinating time of 1-4 days. Adapted from Cooking Light, May 2003
