They are not as sweet as most oatmeal cookies I've had, which is a good thing. We could not stop eating them; especially my preschooler. They are excellent "nutritional supplements!" There is no sugar in this recipe however if you prefer sugar to honey--then simply alter the recipe....cut the baking soda to 1/4 tsp. and add an extra tablespoon of water. Your baking temperature should go to 350 if you are using sugar. When replacing sugar with honey you have to increase the baking soda to increase the acid and you reduce liquid by 1 Tablespoon. Also, with honey baking--lower the baking temp.

Another Danish/Scandinavian recipe. Cardamom is in the ginger family and has a pungent flavor. These cookies will disappear quickly (Unless you don't like cardamom!)

Yummy cookies!! Great when you have leftover bananas that are too soft to eat .. they smell heavenly while baking, and keep well in the fridge ... I don't add the nuts, but you can if you like ..

Simply the best Gingerbread recipe I have had. The addition of orange zest sets these cookies apart they are sweet and slightly spicy at the same time. I am not sure what the origins of this recipe are, I got it from my step-mother Susan who I have referenced before as my cooking inspiration.

These are my hubby's favorite Christmas cookies. His Great Aunt Gin used to make them for him every year and it just isn't Christmas without them. She always made green Christmas Trees and pink Wreaths because those were her two favorite colors. Since they use all shortening they are a very crisp cookie. This isn't something I would do just for the heck of it anymore but for the holidays....maybe. I'm posting this as a cathartic thing. I'm passing on my non-diabetic goodies to folks who can offer them a good home. I just can't abandon them without a chance to become good little recipes for someone else. This could go on for some time, I have a lot of recipes! It's been a long time since I made these and I don't honestly recall how long it took to make and press them out so I'm taking my best guess. *Please note*: As written the recipe will yield a milder spice flavor. If you prefer a stronger spicy flavor double the spice amounts (or to taste).

Another Recipe from Food Network, I love this one! Prep Time equals 20 for prep and 20 for inactive prep. Cook's Notes: These freeze beautifully. Press the cookies out into desired shapes on cookie sheets and freeze. Transfer frozen cookies to a plastic bag, seal, and keep frozen for up to 1 month. When ready to bake, lay out frozen cookies on cookie trays and bake from frozen for 25 minutes. Some disk shapes work better than others. Since this is savory cookie, we liked the cutters that result in a cracker shape cookie, like the ribbon, clover. Stars and and snowflakes work, too.
