    I first tasted this appetizer at an office Christmas party and I was hooked. It is super easy to make, time saving because you make it the night before and is loaded with great taste. Your mouth with thank you for the explosion of flavors.

    This beautiful appetizer consists of an Italian chopped salad that is mounded into cooked pasta shells. It can be made up to four hours ahead and the romaine salad will remain crispy for serving. Note: To give proper credit, this is an adaptation of recipe #29329, which uses chicken as a main ingredient. In the version I am posting, the chicken is eliminated and the chopped salad is garnished with salami and feta cheese. I also make my own vinaigrette, but if you prefer, just use a bottled Italian dressing.

    These are very easy to make for a buffett or appetizer party. I usually double this, because they go fast! Note: The last time I made these, I fried the bacon after I cut it into thirds until it was almost done, cooled slightly on paper towels then wrapped around the water chestnuts and secured with toothpicks. The sauce was a lot less greasy. I cooked for about 5 minutes less. Enjoy!

    My mother used to make these and keep them warm on a warming tray (the kind you plug into the wall) for appetizers. These are really easy and my dh loved these simple appetizers -- plus they can be considered emergency appetizers too as it's easy to have the three ingredients (bacon, a can of water chestnuts and brown sugar) needed to make these on hand all the time.

It's the perfect game day/race day snack but you might not want to wait that long. ;) If you don't like jalapeños use the mild Anaheim peppers.
