    My family would crowd into the kitchen to get their first forkfull of Mom's potato salad. It's that good! This potato salad is not at all sweet - something which was important for our family. Let it sit in the fridge as long as you can before serving... it's even better the next day!

    This is an adopted recipe for me, Jellyqueen, but I am leaving the original introduction for those who already have saved/reviewed this recipe. Hope everyone enjoys this!!! This was my first introduction to fresh salad dressing. I worked for a woman in Manhattan back in the 1980s who made this dressing in a jam jar. She would leave it on the kitchen counter -- we would finish it in about 3 days. It is just delicious and very easy to make. I serve it tossed with field greens or butter lettuce and fetta cheese, walnuts and kalamata olives.

    This is the astoundingly good dressing that we use on our reuben sandwiches and in shrimp cocktail. Others have told me that they make it just to use as a dip, and - coming from my description in our Reuben Sandwiches Our Way (recipe # 107927): "you can call it Thousand Island or French, whathaveyou" - keep it on their table and call it What-Have-You Sauce.     I love this salad with roasted or grilled meats, especially roasted or grilled chicken. I place a mound of the salad on a plate and put the chicken right on top. It's an easy, simple and unusual starch for any meal. Delicious in the summer, especially, when all the ingredients are at their peak.

    Once upon a time, in the recipe request section of an online bulletin board, someone asked for a kiwi mandarin salad dressing. I looked all over for one online, but no luck. So I went to the store and got myself a bunch o' kiwis and such, and came up with one of my own. I had it with dinner that night, and it was darn tasty!     I know this sounds like a strange combination, but it's actually quite good! It's a nice, light salad, with the slightly vinegary taste of the rinsed sauerkraut contrasting nicely against the cool sweetness of the pudding. It tastes similar to carrot and raisin salad. Give it a try!
