This recipe came originally from the LCBO Food & Drink Summer 2001 issue. We serve this alongside the French Bistro Tenderloin Roast With Shallot Sauce recipe from the same issue. It's bright and colourful and the flavours are divine. Use lettuces such as Oak leaf, Bibb, Boston or mixed soft lettuce. Fresh herbs are the best in this dressing. (If you can't find the yellow cherry tomatoes, substitute yellow pepper.)

I made the dressing to eat on avocados. It is equally good with the avocados mixed into the dressing and eaten on a mixed green salad or with other dishes.

Don't be scared off by the ginger juice - if you don't have it, just add some more minced ginger.

Wonderful for a buffet or BBQ. Or anytime really. You could leave out the feta cheese if you're not a fan but I love it, so I always use it if I have it on hand.

This is a very different salad because it contains no lettuce.Once you try it I sure you'll enjoy it. It was given to me by a nutritionist.

This Salata de Cartofi cu Brinza is a delightful alternative to traditional potato salad. The recipe calls for red skinned potatoes, but it's grand with others too. Originally from Please to the Table, a Russian Cookbook.

This is a terrific salad. Everything can be prepped ahead easily, then just putting everything together at the last minute. I always have this at Thanksgiving.

I love this salad with roasted or grilled meats, especially roasted or grilled chicken. I place a mound of the salad on a plate and put the chicken right on top. It's an easy, simple and unusual starch for any meal. Delicious in the summer, especially, when all the ingredients are at their peak.

A lady I work with brought this to a potluck. She gave me the recipe and it is one of my favorite lunch-time salads.

Recipe #85849

Really wonderful and light. I have taken this to picnics and BBQ, everyone really enjoys it.

Recipe #35074

This beautiful, delicious salad can be made the day before, is a little different, and serves 25+ people. Don't let the long list of ingredients scare you. This is VERY easy. But, do NOT leave out the cornbread. It's my favorite dish to take to potluck or covered dish suppers - and there is never any left! For vegetarians, omit the real bacon bits. Vary the ingredients to suit your taste and ingredients on-hand.

Before commercial mayonnaise was available, my Grandmother used this sauce to make her cherished Potato Salad. It is a very-low fat alternative to mayonnaise and tastes better than light mayo, too! Great for tuna, macaroni, or chicken salad, but you'll probably want to add a little mayo, also.

Recipe #57256

A wonderful side dish with fish, chicken, or beef. Adapted from "Simply Tuscan."

Tired of the same old salad? Here is one I cut out of the newspaper from restaurant Zoe in Seattle, Washington.

This is the best cucumber salad I have ever had. This is my grandmothers recipe, (she was from Nagyszentmiklos) and this is a perfect companion dish for chicken paprikas, although I could make a meal out of it. This will quickly become your favorite way to eat cucumbers!

Recipe #87201

I like this recipe because the vinegar, onion, and cucumber taste great together. Also, I love pasta. I clipped this recipe from an insert that came with a Taste of Home magazine a couple of years ago. This dish is great for picnics and potlucks. Expeirment and use flavored vinegars and onion varieties for a totally different taste.

Recipe #70947

This is an easy salad to make and can be planned a day ahead. Prep time does not include overnight marinade.

Great side dish, from the Plantation Room in Calloway Gardens, Atlanta. Making this reminds me of going to see the lights there around Christmas!

Recipe #105412

This came from a computer software program that I can no longer find. Makes a great picnic dish -- really, really good! Noone will guess the surprise ingredient: Coca-Cola

Recipe #28654

This is heaven. I got it from a friend, who got it from a friend...needless to say kids and adults love it.
