    Steingrim and I go to at least two potlucks a month, sometimes more, and we've come up with pretty good reperatoire of very tasty potluck dishes!

    There are many layered dip recipes out there - I have a couple of excellent ones in my collection, too. But this is a tasty new version that I think you'll enjoy! :)

    This recipe was very popular back in my teenaged cast-party days, when my mom would make it for us. I recall getting the recipe from Mike Everheart's mom, I think. I love this stuff! I usually make a double or 1.5 recipe, and keep the extras at home for myself. ;) It's hard to believe how much folks are paying for these layered dips in the stores... it tastes better when you make your own!

    These are a deliciously healthy, filling meal, and good for both everyday eating and when your vegetarian guests come over for dinner!     These are "fajitas" that you can make up ahead of time - you make the filling then put it in a thermal container and bring it along with you to picnics and fill your tortillas on the spot. The meat and other ingredients are cubed/diced, rather than in strips, to make it easier to use as a filling. I like adding vegetables into meals whenever I can, so there are some ingredients in this you might not usually see in fajitas! ;) Prep time includes marination.     I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

    We were feeling like having a bit of Chile Colorado tonight, but weren't looking forward to the hours of watching over it would require with cubed beef; and besides, all the beef was frozen. So I looked in the freezer to see what I could come up with, and hey -- there were meatballs in there! The resulting Chile Colorado Meatballs were "very" tasty, and in addition to being a great dinner item I think will make a really nice potluck and/or appetizer dish in the future.     The hubby requested Mongolian Beef and I'm a big fan of crock pot cooking, so here is the result of my trying to combine the two. Although there's no way to get the slightly crispy texture of real Mongolian Beef from a slow-cooker recipe, this *tastes* like it and the meat comes out nice and tender, with a very flavorful and tasty sauce! This is my recipe #3 from the Pantry Challenge: I am making a dish from whatever I have at home already - those ingredients which are "just waiting around."

    Almost ridiculously easy to make, this soup is based on a recipe from "S.O.U.P.S. - Seattle's Own Undeniably Perfect Soups" by Michael Congdon and is my absolute favorite soup. Although it is titled as "southwestern," this soup tastes very much like my favorite Indian dish of Chicken Korma, a mild, flavorful, non-spicy curry. I also use the soup as a baking sauce for chicken breasts, thighs, and cubed tofu - very tasty!
