    Mindelicious' Vegan Yum Yums

Cookbook for all my recipes that are VEGAN!!!! I <3 Vegans!! In some cases I have just listed sugar or brown sugar, if you are vegan make sure you are using organic or raw sugar otherwise it's not vegan. I'm pretty sure that is the only item in these recipes that would be iffy. ENJOY!!

This recipe is super quick to throw together but tastes like you spent hours!! Love all these flavors together! If you like spicy use more curry paste - if you don't then skip it. From: Vegan Express: Featuring 160 Recipes for Quick, Delicious, and Healthy Meals, by Nava Atlas.

    Recipe #423546

Jalapeños and lime complement each other perfectly in this spicy Mexican classic. This recipe is from vegcooking.com I'm not really big on the meat replacement products so sometimes I leave it out or substitute portabello mushrooms or something similiar to that. *For a spicier soup, use 2 peppers and 1/4 cup hot sauce .

    Recipe #423516

Very simple to make but very fresh, flavorful & filling! Feel free to add in any, all, or other veggies for the hot pot ingredients!

    Recipe #429545

Avocado and hot sauce top these crispy twice-cooked potatoes. From vegcooking.com

    Recipe #423862

Adapted from Leblon Finatinas para Guam [Guam Cookbook]. I have also enjoyed this recipe served HOT - while your grilling the eggplant just heat up the sauce for a different twist! Serve as main dish, or a side with rice. (Serve with Red Rice and Finadene for a real Guam fiesta experience.)

    Recipe #423525

The best kale dish I have ever had! Serve this on top of romaine, with crackers or onion bread!! Delicious!! This recipe is adapted from Russell James (UK Raw Chef).

    Recipe #423530

This is a lovely light pasta dish using the wonderful flavors of spring time!! Feel free to mix up the veggies, spinach, onions, and/or zuchinni would make great additions! (Not sure why it keeps listing mixed mushrooms - just use any type you would like - button, portabella, baby bella all work great)

    Recipe #427458

This is very easy to throw together and you probably have all the ingredients on hand. I came up with this as I had too many baked beans and they are too hard on digestion when eaten straight. You can serve this many different ways....as dip/topping for nachos/tortilla chips, wrap up in a tortilla, over toast for breakfast, alongside a baked potato, or throw in some rice, macaroni, or bowtie pasta for a main meal!!

    Recipe #426809

Breakfast, lunch, or dinner! This tasty blend of quinoa stuffed in a tortilla and topped with a zesty southwestern sauce and avocados is sure to fill you up! Packed with protien & its even cheezy!! Feel free to add even more veggies - onions, bell peppers.

    Recipe #427927

Yet another coconut rice; however, this one is a bit different and the flavors are surprising to the tastebuds. You can put this in a rice mold, pop it out, and top with peanuts and/or toasted coconut. Serve alongside stirfried veggies. From Vegan Fire & Spice, by Robin Robertson

    Recipe #427817

This recipe seems quite involved but its really not that bad after all the chopping and they end up going together very quickly. The end result is amazing & well worth the effort. Serve with a mixed greens salad and recipe #427818 for a main entree or make these into smaller rolls and serve as appetizers! For a wheat free version use Spelt Phyllo Sheets. Recipe #426617

This is a very popular salad in Thailand. This is a vegetarian version and quite spicy. You can buy shredded green papaya but you can do this yourself as well. This is traditionally made with a large mortar and pestle but you can just use a strong spatula. Cook time is marinating time. Serve along with sticky rice. (Note: pregnant women should not eat green papaya or at least research & take caution!!!)

    Recipe #429246

    Quick, easy & very delicious!!
