    Cookbook for all my recipes that are VEGAN!!!! I <3 Vegans!! In some cases I have just listed sugar or brown sugar, if you are vegan make sure you are using organic or raw sugar otherwise it's not vegan. I'm pretty sure that is the only item in these recipes that would be iffy. ENJOY!!

    (LFRV) I'm not huge on juicing because it gets rid of the fiber and changes the natural balance BUT this is amazingly delicious. This makes one serving - I personally triple the recipe to use the whole lemon & so cleaning the juicer is worth it :).     Super yummy picatta version from Isa Chandra Moskowitz's book Appetite for Reduction (love this book!). She pairs it with arugula and recommends serving over mashed potates (Caulipots anyone?) instead of with the traditional pasta. Who doesn't want another excuse to eat mashed potatoes? Also if you want more bulk try adding in some mushrooms. Enjoy!!

    A low fat & simplified version from Isa chandra Moskowitz's book Appetite for Reduction. Instead of using hard to find Jamacian curry spice blend she uses this cheater version which simply adds star anise to regular curry powder - problem solved!! She recommends serving this tasty curry over rice but I served over quinoa and it turned out great as well. We cut the plantains up into smaller pieces than she recommends but that was just personal preference.

I made these for some non vegan friends who were weary of tofu but they said these were amazing!!     This looks a bit lengthy but its really not that complicated. This may be one of the greatest things I have ever cooked up.     (LFRV compliant!) This is a great anytime a day drink however this is perfect as a before dinner smoothie as it contains digestive enzymes. Bromelain, an enzyme in pineapple, breaks down cholesterol in the blood and reduces inflammation in the blood and tissues. Bromelain also eliminates muscle, joint, and headache pain and also helps break down fats. Papain, an enzyme in papaya, breaks down protein molecules in the blood, reducing inflammation that is linked to allergies or pain. Papain even attacks a protein on the coating of cancer cells which helps eliminate this threat.

    (LFRV) Oh I love this dressing!!! I've had it three nights in a row and I'm thinking about it right now. I pour this over baby greens, celery, cucumbers, and shredded red cabbage and I think its quite magical!! This recipe is for one serving so multiple as needed. You could easily add any herbs or spices you want but this is perfect for me!

    This was an interesting idea and I'm definitely going to come up with other fillings for this omelette as well. The plantains are a bit sweet and the garlic cashew cheese compliments them very nicely. I think sauteed onions, garlic, bell peppers, avocado, roasted red peppers, tomatoes, and diced fried potatoes in any combination would work as well. You can substitute green bananas if you can't get plantains. Feel free to use vegan cheese instead of the nut cheese. You can also boil the plantains ahead of time and let cool in the refrigerator until you are ready to make the dish. This is not an "egg substitute" - this is a whole new spin off here and it actually really works - nice breakfast meal and very satisfying without all the artery clogging.     (LFRV compliant!) Oh my!!! I have had this two days in a row and I don't think I see an end in sight - sooooo delicious!! This is so creamy, rich, and so much better than any mint chocolate ice cream I have had (mainly because I can have so much without feeling awful afterwards!!). I use lady finger bananas which are much smaller than normal bananas...I'm not exactly sure how many this would be equal to so I had to use cups...sorry if that causes any difficulties. You may add more mint or carob depending on your tastes - this was just enough to get the flavors for me without wasting. Also I put this down for 2 servings but I drink the whole thing and feel amazingly energized but I guess you could share if you like :)
