These not only look beautiful, they taste wonderful as well. They are like a sandwich cookie with jam in the middle, but the top layer has a smaller heart-shaped cutout to reveal the red jam centre. These are SO worth the effort. You will need two heart shaped cookie cutters (one 3" and one 1.5" for the centre cutout). Wilton sells a set of cutters with one 3" heart and a second 3" heart with the cutout built in, saving you a step.) Prep time includes chilling time.
Grammy Mae had a secret... she used to add a tsp. or two of chilled bacon grease to the Crisco to make up the 1/3 cup shortening in this recipe. (I know... but she and Grampy both lived to be a ripe old age!)
These are delicious and just like the old "Fig Newtons" I remember from when I was a kid. Recipe comes from a very old tattered cookie book that no longer has a cover that belonged to my Mom. They were always a treat around Christmas time.
After a long week of my business traveling, my wonderful retired husband (now past---God rest his soul) would pick me up at the airport and fix this delicious dish, while toasting the coming weekend with the extra champagne. This is wonderful!
