    This is one of my brother's easy to make recipes. There are as many variations as you have imagination. He likes to add 1 cup cooked macaroni or add other fresh veggies. If you want, don't strain out the celery & leeks. It is quick, easy & tasty, however you make it

    This is so tasty, and healthy too! We love black beans. Prep time does not include soaking and cooking the beans, but does include cooking the chicken. You can, of course, substitute canned beans, just drain them. The soup can also be frozen in a sturdy plastic container, or a ziploc bag. To serve, defrost and heat in microwave or on stovetop.

    I remember going over to my grandparents' house as a child, and quite often, they would be making vegetable soup. They grew up in the country, outside of towns with populations under 200. They both were in their teens when the stock market crashed and The Great Depression started (Oct29, 1929). Anyway, what started as foods of necessity for them became dishes they loved. They always kept plenty of fresh veggies on hand (quite often they came for their garden), and it was not uncommon for those veggies to make their way into a homemade soup. I come from a different age, and one day when I was feeling a bit nostalgic for my grandparent's soup, I went to my cupboard and grabbed my cans of veggies. This is my version of their soup. All of the cans I use in this recipe, except for the tomato paste & optional tomato sauce are #303 cans, the ones that usually contain between 14 & 18 ounces of stuff in them, depending on what's in them.

    I soaked some beans the other night to make a veggie chili, but then I found some bacon and spicy sausages (mine were German sausages similar to Kielbasa) in the freezer that needed using up, so I made up this soup instead. We enjoyed it so much that I thought I'd share. This is a very hearty and quite thick soup, which will fill you up and warm you through. Adjust the heat to your taste by reducing or increasing the amount of chili powder and chipotle. I used a 7-bean mix, but I'm sure any kind of bean mixture would work well. Eventhough the sausage is an optional ingredient, it really adds to the flavour of the soup. I followed one of the reviewers suggestions and added garlic the second time I made the soup and have since added it to the recipe as an optional ingredient, it was rather a good addition. Cooking times, include cooking the dried beans.

    I make this thick comforting soup often for my family during the cold winter months. It is so fast and easy to fix and it is rather low in fat and calories. This makes 4 very large servings. To reduce sodium, you may use low sodium green beans if you prefer. I adapted this recipe from "Fast, Cheap and Easy," by JoAnna Lund. Condensed cream of tomato soup and condensed regular tomato soup are interchangeable in this recipe; no alterations necessary.The important part is that it is indeed a condensed version of tomato soup, as opposed to ready to serve.
