    The original recipe called for chopped pistachio nuts, but when my mom was teaching me to cook, she only had cashews. I was never a cashew fan until I tasted this dish. The cashews become rather soft and separate into halves. The whole dish has an aromatic and softly sweet flavor. I've used cashews ever since, not even bothering with pistachios!

    I got this recipe off the internet a while back, but I can't remember which website. It is my favorite way to serve rice. It's simple to prepare, very tasty and turns common rice into a tasty side dish to complement just about any main entree. I've been making it for a long time now, and I find that it goes really well with just about any main dish. But my all-time favorite is to serve it with baked chicken breasts served with a tangy lime sauce. UPDATE....based on feedback, I have worked on improving this recipe. Specifically, I increased the amount of water (from 3 1/2 cups to 4 cups, which I think produces a much fluffier rice. But if you have better luck using more or less liquid when cooking rice, please feel free to adjust the amount of water.

This is my blend of some of my favorite Persian flavors.     This Lentils Rice recipe is known as Mujadarah in the Arab countries. There is many different recipes for Mujadarah, this recipe is very easy to cook with little Ingredients, and besides being nutritious,it is inexpensive. This recipe is an excellent vegetarian dish.     This is a favorite with fish or chicken, an easy, mild rice with a unique flavor. You can use chopped Brazil nuts to be authentic, but since I really don't like them, I use pine nuts.
