And it might not taste quite the same without silty, white glowing sand stuck between your toes and the near promise of a turquoise swim, but you can always imagine.
Also known as creole mustard potato salad, or like mamaw called it; Lousiana Tater Salad. I am posting for ZWT5. If creole mustard is not available, you can substitute coarse ground mustard with a touch of prepared horsaradish. This is a nice side dish to the Louisana favorite, red beans and rice.
Fresh cottage cheese salad. Utilize the veggies from your garden. I'm not sure when I started making this salad. My grandma came up with it years ago, and I've made some simple changes to make it my own.
**I've never had this salad on a bun, but my fellow Zaarites have taken gorgeous pictures in that form. I think I'll try it on a toasted onion bagel!

Made with chickpeas (garbanzo beans), this is a wonderful sandwich filling, especially for vegetarians who miss tuna salad. I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.
Mom’s potato salad was always just a little better then all others. She said it was her secret ingredient and her I am giving it up. Sorry mom.
This salad can be eaten after 4 hours but is best served the next day.
No meat in this taco salad! My husband and I love this so much we often have it as a meal by itself! Regular Dorito's are sometimes hard to find but taste much better in this salad than Tostito's or other white-corn chips.
This dressing has wonderful flavour with virtually no fat. Try this on a Spinach and Strawberry salad....it will blow your mind and your tastebuds. Taken from her 'Heart Smart' cookbook, she notes: "This dressing can also be made with other mild vinegars such as raspberry, sherry, Champagne or a good red wine vinegar." NOTE: after several reviews, I'm going to adjust the water amount to 1/2 - 1 cup. Thanks for the suggestions everyone. :)
