This recipe is so handy to have cooked chicken on hand for casseroles, burritos, fajitas, chicken pot pies, pasta, stir fries, pizza, chicken sandwiches, soups, salads...... Can't get any easier than this!!! My crockpot gets heavy duty time in the summer when all we want to eat is salads and you don't want to get the big oven going! This recipe is from "Slow & Easy, Fast-Fix Recipes For Your Electric Slow Cooker" by Natalie Haughton, 2009. It is a good way to have chicken on hand during the week that was cooked over a weekend. Can't wait to try it!

Mary Beth Roe is one of those QVC sales gals. She also is an accomplished cookbook writer and I am fortunate to have several. All of her recipes are home cooking. This is one of the better chicken ones.
There are a number of recipes around that are much like this one, but this one has a difference. It is a "scratch" recipe. It does not make use of convenience foods; so it is not "semi-homemade", it is totallly homemade. Is there a difference? I don't know as I never made this dish the other way. But this way is totally good! In fact my MIL's recipe for Thanksgiving stuffing is much like this one, the exception being that she uses hard-cooked eggs. Recipe from Byrn's book, "What Can I Bring?" If desired, you could take the option of using cornbread mix (or commercially prepared) and rotisserie chicken -- Byrn does allow for that, and I won't tell!
Taken from a Fix it and Forget it Cookbook. Yummy served over croissants and would probably be good over biscuits as well. Turns out with little effort. Makes a lot of creamy sauce. You might be able to cut back a little on the soups, but I usually follow the recipe as directed, since I'd rather have too much sauce than too little.
For the soups, use any combination of your favorites--whatever you have on hand--cream of celery, cream of chicken, cream of mushroom, whatever. I have also used reduced fat versions with no problem.
If you prefer, this recipe can be done on the stove but I recommend cutting the spices in half. In crock pot cooking, dried spices loose some of their kick. This is a great recipe for leftover chicken.
