Here is the second of my Algerian bourek recipes. I have also posted a Chicken & Preserved Lemon Bourek recipe. This cheese & potato bourek is another of my family favourites & there never seem to be enough! You can use phyllo dough instead of the spring roll sheets. You can also add a few finely chopped olives in place of the gherkins. You can buy Boursin or use one of the recipes on Recipezaar to make your own. I stuffed the eggs (thus the name) pretty full with the filling, so if you like less filling, you might want to have some extra eggs on hand to stuff :)

It's not too hot, but not sweet like most sauces out there. I'm still playing around with it, but I like how its going so far! ** update ** I have decided that perhaps pureeing the onions and garlic might be beneficial because most barbecue sauces don't have chunks of onion and garlic!
