    Sarah_Jayne's Low Gi Recipes

In my quest to eat healthier I have adopted a Low Gi eating style. I don't follow any particular Low Gi diet but instead I just try to make sure most of what I eat is made up of ingredients which have a low glycemic index rating. These are a collection of recipes which I consider to be Low Gi.

I have been playing around lately with trying to make different kinds of reduced fat burgers to go with the low fat eating plan I am on. This is my latest attempt. I used ground turkey breast so that I didn't feel that bad about having a little bit of fat from the sundried tomatoes but at least it is 'good' fats. The cooking time includes the one hour chilling time.

    Recipe #304891

As part of my pursuit of a healthier lifestyle, I am always looking for new ways to use beans. This recipe looks like it would hit the mark rather well but still taste lush. It was originally printed in the January 2008 copy of the BBC Good Food Magazine. The recipe says it can be frozen.

    Recipe #276880

I am a big fan of pearl barley as it is cheap, tasty, healthy and very filling. This sounds like a great new way to enjoy pearl barley with a bit of an Italian flare. I originally found this recipe in the BBC Good Food Magazine.

    Recipe #305563

If you read through my recipes you will find a number of recipes using lentils. Over the past year or so of eating a healthier diet I have come to know and enjoy lentils a great deal. So, when I see a new recipe involving lentils I like to add it to my collection. This one I found in the Winter 2008 version of the BBC Easy Cook magazine. The recipe says that it is able to be frozen.

    Recipe #292658

Mushrooms are my favorite food and I especially like marinated mushrooms. It is really hard to get marinated mushrooms in the UK though. So, I was really happy to find this recipe in the BBC Good Food magazine. It is from the Australian TV cook, Bill Granger. I really like his simple and healthy recipes.

    Recipe #276716

I threw this together when I was really craving kraut. It can be really hard to get good kraut in the UK but as I grew up Pennsylvania Dutch sometimes it is hard to ignore the calling of the kraut juice in my veins. This is really easy and reminds me of when my mother would slow cook pork and kraut for New Year's Eve. Using the lean pork steaks actually makes this pretty low fat. It goes well with mashed potatoes.

    Recipe #271421

Barley has to be my best food discovery of last year. It is really cheap and a little bit goes a long way in a dish because it really bulks out during cooking. Not to mention how healthy it is for you. This is my latest barley creation. You could have it as a side dish but I just split it between myself and my finance and it made a very filling meal for two.

    Recipe #282831

These tuna burgers are a great way to get people that don't think they like fish to eat and enjoy it. These burgers are very low fat, particularly for a burger, easy to make and taste really good. The wasabi paste I used didn't overpower the other flavors but added a nice background taste but if you wanted a stronger strength you could certainly use more of the paste. The cooking time includes the 30 minute chilling time.

    Recipe #303127

We had this for our main meal tonight. I rather heavily adapted it from the UK tv chef, Simon Rimmer's book 'Accidental Vegetarian'. I knocked out most of the fat he had in it (though it was all good fat) and changed around some ingredients to make it more low GI friendly. On top of being tasty this is pretty healthy. It is vegetarian, vegan, low fat, nearly saturated fat free and great for those of us with insulin issues because it is full of slow burning carbs with a low glycemic load. You could of course use normal spaghetti rather than the whole wheat kind but I use that just because it has a ton of fibre in it.

    Recipe #301361

I am always on the hunt for healthy recipes and new ways to use vegetables that I already like. I never really think of not cooking zucchini but this sounds good. It is the recipe of British TV chef Merrilees Parker and was first published in the August 2005 issue of BBC Good Food Magazine.

    Recipe #276931

We enjoy vegetarian chilli and this looks likes a quick and easy recipe. It is low fat and full of veggies and beans that are great for you. I originally found this recipe in BBC Easy Cook magazine. The recipe says that it is suitable for freezing.
