This is a great spice in chicken, fish and Steaks. Warning: Do not cook inside since it will smoke up your kitchen and the neighbors for sure will call the fire department and you will have to feed them. Cook meats on the grill or a fish cooker.

    Recipe #242137

The is adapted from Alton Brown's recipe.

    Recipe #258309

If you want really good flavor, make your own spice mix! In the ingredients, the Szechwan peppers are actually peppercorns, but for some reason, the computer program won't let me say that. This is adapted from China Moon Cookbook. This can be used in marinades, sauces, mayonnaises, chopped meat, sauteed vegetables, and pastas! Have fun!

    Recipe #257153

I always dry at least a kilo of orange peel during the summer months - and that keeps me right through until next year. This is not so much a recipe as a technique, but it is so useful to have a jar of this in your pantry throughout the drear winter months. I use this dried peel in daubes, tagines, stews, curries, marinades, desserts, cakes and baking. It really does not take that long to dry in direct sunshine - and the quicker it dries, the more intense the orange aroma and the higher the oil content. A great by-product of oranges, and a part that is normally thrown away!

    Recipe #254233

spice mix used in Pakistani snack recipes.

    Recipe #253463

Persian spice mix. This blend is usually added to soups at the end of cooking time. It brings out the flavours of Persian food.

    Recipe #253150

An aromatic Persian spice blend which is good added to stews and pulses. This recipe is from " A Taste of Persia" by Najmieh Batmanglij. The author suggests adding the rose petals to the ground spices. After trying both ways, I prefer to whizz them in the spice grinder for a minute or two.

Unable to find sumac, I found some websites that recommend substituting lemon zest. This is what I decided on after loking at many recipes.

    Recipe #189727

I found this yesterday in my Cooking Light magazine. It worked GREAT in Redneck Epicurean's Cajun Roasted Chicken #146464! It is not too hot & is low in salt.

I was looking for Cajun seasoning for my New Year's Day black eyed peas. This is based on Julie Sahni's recipe in "Savoring Spices and Herbs" with a few alterations. Everyone loved the peas, btw. NOTES: I ground only 1/2 the herbs/spices for textural effect. I usually grind up a whole nutmeg & store in a jar so there's always an amount of fresh nutmeg on hand. "Cook" time = grate & mix time.

If you run out of pumpkin spice -- no need to fear -- make your own!
