    These pork chops come out nice and juicy with excellent flavor. These can stand alone with out the help of any sauce or gravy. Yum! They are a huge hit in our house. I actually got the recipe from a application on my phone and thought "why not". Glad I took a stab at it.

    If you are a garlic-lover then you will like this recipe! Plan ahead the roast needs to refrigerated overnight and left out at room temperature for 1-1/2 hours before roasting. If you do not have a roasting pan, then cover the pan completely with heavy foil.

(actually he says better, because Tony Luke's cooks the broccoli rabe too much)Tony Luke's is a walk-up sandwich joint down at Front and Oregon in South Philadelphia...You don't get more "South Philly" than this! People stand in lines around the corner for this and their Chicken Special, which is the same sandwich, but with an Italian Fried Chicken Cutlet instead of the roast pork. Mangia! Start this in the morning because it has to cook slowly until it falls apart.

    I looked and didn't find any pork roast made this way. This is the way I have made a Pork Butt Roast our entire marriage of 48 years. It is easy and oh so tender, juicy and delicious. I always serve it with mashed potatoes and make gravy from the rich drippings. If you make a large roast the leftovers can be made into many other dishes...even BBQ pork sandwhiches if you simmer some of it in BBQ sauce until it is absorbed.

    This is my favorite way to cook a pork shoulder roast. Very tender and delicious! This recipe came from the "Paula Deen Cooking Show" (Food Network). I've changed the prep procedure to make it easier and reduced the sprinkled on salt mixture to 1/4 of the original amount called for in the print-out version of the recipe (Think it was posted wrong!)
