This is a classic favorite of all of the Luby's Cafeteria customers. From the Luby's 50th Anniversary Recipe Collection Cookbook. The taste of this M&C might be a little bland, but you can always kick it up.
A casserole for the nights you have to get a good meal on the table in a hurry. I love casseroles that use good ingredients and is a recipe that you can change to your own taste. You could add some other vegetables to this one. I just love the Dutch-Amish recipes.
When I was in grad school (and better at watching my weight!), I got a cookbook called "Great Taste -- Low Fat Chicken" and this is my favorite recipe in it. The rosemary adds a wonderful flavor to this healthy, one-dish meal.
I was looking for something easy to make for Sunday dinner and put together this casserole and let the oven do the work. The sausage was so juicy and really flavored the cabbage, potatoes and carrots beautifully.
Originally from Susan Aaronson, Prodigy, 9/91, who said this is a very rich and filling dish but absolutely wonderful. Absolutely right!! Also very good with sweet sausage or a combination of both. Please do use all the spices to attain the correct flavor. And, yes, I've been making this since 1991!
Olive oil, garlic and herbs. Three simple ingredients that taste great together on just about anything. Here they are combined with chicken and potatoes. I used thighs in this but feel free to used legs or breasts. It looks like a lot of steps, but it's really easy to put together. For a complete meal, add some veggies such as sliced carrots, zucchini, peppers, etc. Makes for easy cleanup too!
Super easy comfort food that can be made while you're busy doing other things in the evenings. There is hardly any prep time making it a great recipe for weeknights after work. This is my daughter's favorite meal, she likes it served with green beans and hot rolls.
