From WW Magazine. You can make the salad up to a day ahead if you like. You can also use store bought or rotisserie chicken.

    Recipe #121756

One of Cooking Light's Superfast recipes. Great for a lighter dinner or packed lunch.

From Cooking Light April 2005. A delicious twist on chicken salad.

    Recipe #132645

I have no idea where I got this recipe. It has been sitting on my desktop for about 3 years, and I didn't try it until last night. If only I had known! This is so yummy! And you can't even tell that it's lowfat!

This salad is incredible! A salad with BBQ chicken, corn, black beans, tomatoes, avocado, scallions, and Cool Ranch Doritios. I get requests for this all the time. It's my favorite main dish salad recipe. It does have to get eaten quickly because the Doritos get soggy after about 20 minutes. I've been using the baked Doritos to make it healthier, but that's optional. I also sometimes toss in jicama or fresh cilantro and basil when I have them. As far as the greens go, I usually use prepackaged salads when they're on sale. This a a recipe adapted from "California Pizza Kitchen Pasta, Salads, Soups, and Sides."

This is another delicious warm weather salad from my Pillsbury cook booklet from 1990. It is delicious and makes a pretty presentation. So refreshing!!! Hope you enjoy!!!

    Recipe #94316

This has to be the most requested recipe in my way-too-vast collection. It comes from Chiffonade Chef on the FC site, and she submitted it to Gourmet magazine some years ago. It was accepted and printed almost immediately. It's so easy, and so tasty, you will see why.

    Recipe #63639

This is a beautiful salad suitable for a light dinner. I would feel very comfortable serving this to guests.

    Recipe #115217

This is from our local paper. It is a very nice lunch or light dinner dish.

    Recipe #175911

A nice easy casserole. Serve with a dallop of light sour cream on top; if desired. Sometimes I add some corn to the chicken mixture.

    Recipe #140736

My mom found this recipe years ago, and it is still of the most often made (or at least craved) meals. Packed with flavor, this dish is sure to excite your taste buds!

A great casserole with sun-dried tomatoes and artichoke hearts. Easy to prepare in your oven. Goes nicely with a loaf of Italian bread and a glass of wine.

This salad is sweet and creamy and one of my daughter's favorites. You can also use the pina colada flavor yogurt in this, it works well also.

This is something I made when I was hungry for garlic and vegetables and Italian, but wasn't really in the mood for pasta or meat. It makes a great side dish, but I just had it for a dinner, myself. My husband loved it too!

I love this because it has so many of the things I like best about Mediterranean food in it. It makes for a great meal.

A light, fruity chicken dish, only 4 WW points, but you would never know. Other fruit preserves, such as apricot, blackberry, or peach will also work in this recipe.

    Recipe #98370

Prep time approx. 40 min (I found this in the May 2003 Canadian Living Magazine) This is a quick and easy recipe. Garlic becomes mellow when roasted,(so don't let 12 cloves scare you away) and roasting the tomatoes brings out the rich flavor. The two compliment each other. Using cherry tomatoes saves time so if you use other kinds of tomatoes it may take longer. I have two kids age 11 and 14 who love this recipe and always have more than one helping.

    Recipe #60981

Romantic little recipe for two that wont leave you too full to flirt! Yummy garlic and wine sauce coat the shrimp and pasta. A salad and some crusty fresh bread would be very nice with this and a nice chablis or chardonnay wouldn't hurt either! I came up with this after totally revamping a recipe found on healthycookingrecipes.com. "PLEASE adjust the seasonings to make it perfect for you and DO let me know how you change it up." Enjoy! UPDATE! As listed yes the portion is quite large as you would find in a restaurant. Feel free to reduce the amount of pasta to save calories. We always have leftovers which is fine by me! I remove the shrimp to reheat. Zap pasta in micro for a few minutes then add the shrimp on top for about 20 seconds to remove the chill! Also feel free to experiment! More tomatoes, canned tomatoes (just use organic or add a pinch of sugar) less red pepper, more red pepper. You get the idea. Enjoy!
