This is from "More Make Your Own Groceries". There are instructions for both eating right away and freezing to eat later. This is one of several dishes I made in preparation for the birth of my daughter and would probably be good for someone who doesn't usually have enough time (or energy) to make a healthy meal for themselves every day, but has a period of time to make this. I've probably estimated prep time on the high side because I'm a slow cooker.
These empanadas require no browning of meat, no cooking of vegetables, or anything else time consuming! Instead, you just use refrigerated pizza dough and ingredients straight from the can or jar. The recipe is from Real Simple magazine.
My DH loves those frozen Tony's Pizza Rolls....I'll eat them too, but....what exactly is in them?? We probably don't want to even know! These are MUCH better and at least we know what we're eating!! Buy extra sauce for dipping if you'd like, but they really don't need it. Also, add/omit any ingredients you like or don't like. Make them to your own taste of course. This is what we like in them.
My good friend Donna brought this to our Thanksgiving feast this year 2006' and it was the hit of the table. Not only is it low calorie but tastefully delicious. The best pizza dough ever!!! This recipe orginated from the "Emeril Live" television show. I changed a couple of things but the recipe is incredible. Rises well...My boyfriend raves that it's better than any take out pizza :)
