This is a nice twist on the traditional creamy potato salad. I like this served warm or room temp, but by all means it can be served chilled. It has a nice sweet/tangy vinaigrette with fresh herbs and roasted vegetables. I think you will enjoy it.

This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella. Enjoy!

POPULAR salad choice! A great side dish for a potluck or picnic which is colorful and full of flavor! Everyone looks forward to this dish that contains no mayo.

A nice summer potato salad with a little kick.

This is such a wonderful and easy recipe, especially if you are Stilton cheese and potato fans, as we are! Just slice up pre-cooked potatoes, add a slice of Stilton, season and bake in a pastry case, and there you have it......a great snack, lunch or picnic food extraordinaire! Serve them with assorted chutneys, pickles, salads or even MORE potatoes for a very tasty meal. I have stipulated ready-made shortcrust pastry, but puff pastry would also work well. Ingredients are listed for 4 people - however, this recipe is easy to multiply or reduce, according to your potato and Stilton supplies!!

These are fast, cheap and easy. My family inhaled these. This is based on a recipe I saw prepared on Calling all Cooks years ago, with qute a few of my own changes. I use Habanero Lime Hot Salsa in this, but any level of heat that you desire is fine. I have used Emeril's Southwest seasoning, and also Tastefully Simple's Fiesta seasoning in these before, both turned out well. Seasonings measurements are really to taste, I had to give measurements for the computer, but feel free to adjust to your saltiness and spiciness preferences.

A very tasty coleslaw using a pre-packaged cabbage mix and dressing it up with cranberries and nuts. Feel free to lighten it up with low/no fat mayo & Splenda.

After picking up a loaf of King's Hawaiian bread on a whim, I went searching for a sandwich recipe to use it in for Super Bowl eats. I found this one on the King's Hawaiian site and decided to try it since it is simple, and I had everything already on hand except for the dressing. I used Miller's Recipe #16234, and the bacon flavor added a nice touch. I enjoy sandwiches of this type that serve several people, and I like that this one includes spinach. I think a clove or two of minced garlic would be a nice addition to the spinach mixture, but it does seem like I may just have a problem cooking without involving garlic. :)

We love Tuna and Pineapple, so it was natural, that we made a tuna cheese sandwich with pineapple rings. Makes 8 sandwiches.

This recipe dresses up store bought focaccia and is presented layered with a gooey cheese filling. Taken from the BH&G magazine.

Another potluck hit! Nice flavor. Recipe is from Taste of Home magazine.

Guacamole is good stuff, but sometimes it gets a little over-used and boring. If that happens or if you just want a change of pace, try using this tasty and so-easy-to-fix version of a stuffed avocado w/your next Tex-Mex meal for an aesthetic presentation and crowd pleasing alternative to guacamole. The stuffing mixture can be made a day ahead, but the avocado prep and assembly should be done just prior to serving. I’ll bet you and your friends will like this. :-)

Got this off Food Network Canada three years ago, the Chef was from Ottawa, not much tweaking done to it, other than he showed it on a BBQ and I do it on a stove. Low skills thing, but if you "believe" and follow through with the recipe, it will give you a great meal or accompaniment...

After reading a brief article about the all-American chocolatier, Andrew Shotts, I wanted to try one of his decadent recipes that helped him earn his spot among the “Top 10 Artisanal Chocolatier” by USA Today. I can honestly say, hands down, this is the best chocolate cake I have ever made and probably will ever make. WARNING: If you are not a fan of incredibly moist and tender, rich but light, and fudgy but creamy chocolate cakes then this dessert is certainly NOT for you. If you are… then buckle your seat belt this is pure chocolate ecstasy. Use the highest quality chocolate and cocoa you can find. MAKE AHEAD: The cake will stay fresh in the refrigerator for up to 3 days (covered). Bring to room temperature before slicing.

Very flavorful. A different twist on the ol' deviled egg.
