    The secret this recipe is advance preparation. It needs to be made at least 4 hours in advance, and the dressing should stand for two hours before being added to the salad. From the Berghoff Family Cookbook. Prep time includes chilling time and standing time (for the dressing). Can be served hot, cold or at room temperature.

    This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella. Enjoy!

    This is such a wonderful and easy recipe, especially if you are Stilton cheese and potato fans, as we are! Just slice up pre-cooked potatoes, add a slice of Stilton, season and bake in a pastry case, and there you have it......a great snack, lunch or picnic food extraordinaire!     This recipe was given to my mother by a dear friend. I use pre-packaged slaw mix that has the carrots already in it and just add the onions. Also, I use Canola oil instead of Crisco. This can be made "days" in advance as it gets better as it sits.

    These are fast, cheap and easy. My family inhaled these. This is based on a recipe I saw prepared on Calling all Cooks years ago, with qute a few of my own changes. I use Habanero Lime Hot Salsa in this, but any level of heat that you desire is fine. I have used Emeril's Southwest seasoning, and also Tastefully Simple's Fiesta seasoning in these before, both turned out well. Seasonings measurements are really to taste, I had to give measurements for the computer, but feel free to adjust to your saltiness and spiciness preferences.

    This sandwich is so good, I make these all the time for my family. Prepare the egg mixture at least 4 hours in advance, cover and chill. All ingredients can be adjusted to suit taste..a tip, if you don't use the complete jar of pimiento, just pop the whole jar into the freezer and save it for the next time. This is also great served on a bed of lettuce leaves with chopped bacon sprinkled on top and all around, for a luncheon or brunch get together, just decorate with tomato wedges all around the plate.     After picking up a loaf of King's Hawaiian bread on a whim, I went searching for a sandwich recipe to use it in for Super Bowl eats. I found this one on the King's Hawaiian site and decided to try it since it is simple, and I had everything already on hand except for the dressing. I used Miller's Recipe #16234, and the bacon flavor added a nice touch. I enjoy sandwiches of this type that serve several people, and I like that this one includes spinach. I think a clove or two of minced garlic would be a nice addition to the spinach mixture, but it does seem like I may just have a problem cooking without involving garlic. :)
