I just ran across this recipe in 101+ Delicious Diabetic Recipes The Ultimate Fuss-Free Cookbook. I haven't tried it yet, but am planning to very soon; probably tonight. Sounds good, and warm so I really wanted to share it with everyone.
I don't think it can get much easier. This one got a double thumbs up from DH. It's important to use frozen mashed potatoes and not dried, instant mashed potatoes. This was published in The Columbus Dispatch.
I have been surviving on soups for two weeks following oral surgery. I made this today (3-13-06) just as soon as it arrived online from Campbell's Kitchen. Easy to make, and even easier to "chew." A very nice, creamy texture, and very flavorful.

Another yummy recipe from Rachel Ray Show. This one is for dinner tonight. Picture to follow. ;) Looks Yummy though. I would use a 3 cheese blend - parm, asagio and romano myself as that is my fav. I will also use 1-2 8oz packages of Rising Moon Garlic and Basil frozen Gnocchi (depending on your preference)in place of the fresh since I could not locate fresh in the refrigerated grocery aisle here locally. May be only seasonally in my area. ;)
I first learned to like this soup at a Chinese restaurant called Nong Chin's in Marion Illinois. I had to try my hand at copying it, as I love it--this is the result. AND these people DO NOT give out their recipes.
I don't remember where I got this recipe but it's good and healthy! If you enjoy a stronger flavor feel free to increase the garlic, ginger and spices. I usually do in all recipes I make but I hadn't made this in awhile so I posted the original.
