I looked in the fridge tonight and all I could find was a small bit of roast chicken and some veggies. I decided to give this method of making chicken stock a go – shared with me by the Home Ec. teacher I work with. It makes a wonderful stock and this was the resulting soup.

Good for what ails you! Even better the next day. From Cooking Light Magazine.

Do you like that warm comfy feeling? Try this on a cold day or night. This recipe can be doubled or tripled. I double using my slow cooker. I use leftover roasted corn from summer cookouts, just remove from cob and freeze. Gives a nice smoky flavor to soup. Grilled chicken works well too.

This is a refinement of a recipe I created when my boyfriend was sick, and I wanted to make chicken noodle soup from what we had on hand. For the authentic poor college student version - use 1 can of Swanson's chicken broth + 1 cup water, and a brick of ramen noodles. I get nostalgic just thinking about it. But I like this version better.

Perfect on a COLD winter's day. Soup doesn't have to take all day to taste great. This is easy enough to prepare after working all day and still tastes homemade.

Recipe #336723

The fluffiest, biggest soup dumplings you'll ever fall in love with floating in your favorite canned soup. This recipe has been passed down through my family for generations.

I know there's a bazillion chicken noodle soup recipes in here but this one's different. I found this Nigella Lawson recipe in the Chicago Sun-Times and it's for just one person, which I thought was very nice. The seasonings and ingredients are a bit different also, from regular chicken noodle soup recipes. I made this using ramen noodles but I will try the udon noodles next time, I just love them!

Rachael Ray made this on her show recently and I can't wait to try it. It sure looks good and healthy. She promoted this as a 15-minute soup.

This recipe is easy and can be doubled, tripled, whatever! It is a quick alternative to pot pie as there is no crust to deal with (I always go for the center anyways)

From my Romanian Collection.

A quick and satisfying recipe, best served when one needs to recover from a late night! Recipe from the book WHAT TO COOK When You Think There's Nothing in the House to Eat. By Arthur Schwartz. Menudo is a legendary tripe soup/stew of Mexico and the Southwest United States, where the joints that serve it often don't open until midnight. Menudo can, its devotees say prevent a hangover. Tripe soup eaters all over the world claim this, so it must work. Experts on such nutritional/medical matters explain that its the protein from the tripe and the liquid of the soup medium that stave off the side effects of overindulgence. Theoretically, high-protein chick-peas in soup should have a similar effect.

Enjoy all the flavors of a classic clam chowder without wondering where on earth you'll store all the leftovers! Great with a sandwich for lunch, or as an appetizer for a seafood supper.

Recipe #88501

An easy classic beef barley soup with lots of flavor! Feel free to add in any extras of your choice, I like to add in chili flakes and jalapeno peppers for some heat, I also like to sprinkle some fresh grated Parmesan cheese on top of the soup in the bowl

Recipe #77640

Soup just like my mum makes. This is a traditional Scottish soup that makes full use of leftovers, or can be cooked from fresh ingredients. I prefer it made with roast chicken leftovers. Apparently the original recipe dating back to the 1600s included prunes but not rice. I’m not quite sure where rice comes into Scottish cuisine but the recipe that most Scots would recognise these days would have rice and no prunes! The rice is supposed to be overcooked and should split and go curly. Par-boiled rice won’t work.

Recipe #296831

Can be made up to 3 days before required. I've made this a bunch of times at our place because we love corn. So quick to prepare.

Recipe #214411

Have lots of dill at the moment as the stores won't sell just one sprig. :-) That sent me looking for new recipes to use up my bounty. I just love barley in soups so this appealed to me.
