    I looked in the fridge tonight and all I could find was a small bit of roast chicken and some veggies. I decided to give this method of making chicken stock a go – shared with me by the Home Ec. teacher I work with. It makes a wonderful stock and this was the resulting soup.

    Do you like that warm comfy feeling? Try this on a cold day or night. This recipe can be doubled or tripled. I double using my slow cooker. I use leftover roasted corn from summer cookouts, just remove from cob and freeze. Gives a nice smoky flavor to soup. Grilled chicken works well too.

    This is a refinement of a recipe I created when my boyfriend was sick, and I wanted to make chicken noodle soup from what we had on hand. For the authentic poor college student version - use 1 can of Swanson's chicken broth + 1 cup water, and a brick of ramen noodles. I get nostalgic just thinking about it. I found this Nigella Lawson recipe in the Chicago Sun-Times and it's for just one person, which I thought was very nice. The seasonings and ingredients are a bit different also, from regular chicken noodle soup recipes. I made this using ramen noodles but I will try the udon noodles next time, I just love them!

    Soup just like my mum makes. This is a traditional Scottish soup that makes full use of leftovers, or can be cooked from fresh ingredients. I prefer it made with roast chicken leftovers. Apparently the original recipe dating back to the 1600s included prunes but not rice. I’m not quite sure where rice comes into Scottish cuisine but the recipe that most Scots would recognise these days would have rice and no prunes! The rice is supposed to be overcooked and should split and go curly. Par-boiled rice won’t work.
