    This recipe was sent to me by my mum,who thought that her beloved grandchildren might enjoy them! The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

    This is a cute finger food for a party. I buy the proscuitto that's prepackaged in the fancy cheese section of the supermarket. From there I just trim each of the thin slices to fit in the mini muffin tin. Don't be tempted to add salt to the ricotta mixture; the proscuitto is salty enough to carry over. Enjoy!

It's best to use the fresher raviolis found in the refrigerated secion, but you can also use frozen raviolis, you just have to let them thaw first before breading them. The Toasted Ravioli at Olive Garden has a beefy inside, but you can use any ravioli that tickles your fancing including chicken, sausage, vegetarian or cheese. As for the breading, find Progresso brand Italian style breadcrumbs. Contadina is another popular brand, but their version is much to salty for a good clone. I borrowed a friend's cookbook entitled Top Secret Restaurant Recipes 2 and wanted to put this recipe here so that I wouldn't lose it.

    If you like extreme heat then throw in another jalapeño and some Tabasco, this could also be made omitting the jalapeño if desired, my family likes it really hot so I use 3 large jalapeño with the Tabasco :)

    I grew "Golden Boy" tomatoes in my garden this year. If you are not familiar with that variety, they are wonderfully sweet and are an amazing shade of orangey-yellow! I threw this dish together one night all from bits and pieces I had leftover in the fridge. I toasted the bread plain, but feel free to grill ot toast it with a little olive oil and garlic. Also, shredded fresh basil leaves would be a nice addition as well.

    I've been playing around with this recipe from Taste of Home Back Yard Grilling and think I've got it right for our taste. This is so good, it can be a meal in itself. It's a little heat intense, but we like it that way. We loved the combination of spices. Hope you try it.
