    Leftovers from Ham,Onion,Cheese, & Potato Casserole

    Leftovers from our Dinner on 10/4 were :
    Ham, Onion, Cheese and Potato Casserole
    Since it was just two of us,there were a lot of leftovers.And I had to get creative.
    So I added some chicken broth and leftover peas.
    Soup for Dinner on 10/7,

    And then fried a bit of the casserole, then topped with a Fried Egg for my
    lunch on 10/8.

    rotfl.gif you fooled me as I was waiting for the page to load I was hoping for lima beans and was very surprised to see soup and breakfast.

    That soup looks sooo rich and tasty and what a creative and tasty change that egg is. Both great ideas I never would have thought of.

    That soup has a lovely colour, and the rolls on the side of the plate looks yummy! Lunch also looks attractive.

    Gee, I wish I could hire you, because I run out of ideas for leftovers -- we're also only 2, and it's difficult to cook just the right amount for 2 -- as DH often has seconds anyway! So often the wild mongooses and genets (I suppose gratefully) get meaty leftovers.
