    Warming up Yeast

    Hi everyone,
    I posted here a few days ago looking for some help with my bagel dough not rising enough.
    I read on another website that you shouldn't warm the water in the microwave because it could become too hot and kill the yeast. (just as if its too cold it will do the same thing). Every time i've made my bagels i've done exactly that, pop the needed amount of water in the micro and when it dings put it in with the dry ingredients. Could this water be too hot and actually be killing the yeast-or at least hindering it somewhat- and I wasn't even knowing it? Am I better off letting my tap water run until it is hot and using that instead?
    I'm using bagel recipe # 181505.
    As always any help is much appreciated

    Absolutely that could be the problem. The microwave heats water unevenly - it will even out once it's stirred or after standing, but you might not know how hot it really is if you are just going by time. I also would not use hot water from the tap. It can be too hot, and hot water carries some of the leached minerals from piping or the water heater, can bring off tastes.

    I use room temperature water. I have a tea kettle and if I have not used it lately, that water is room temperature. I realize that recipes tell you to heat the water, but honestly, the yeast will rise in anything that does not kill it, it's just a question of how long it takes.

    If the kettle water is hot, I mix some cold water with it. I would rather that the water be cool and the dough take a bit longer to rise, then risk it being hot enough to kill the yeast. If I am organized, I might pour out some water in a pitcher and let it stand overnight.

    I've heard the yeasties go belly up at 120F or above. I mix tap waters and test on the inside of my wrist as you would for a baby bottle. That's usually 95F + or -.

    Good morning. Yes you can murder yeast by employing excessive hot water to yeast. Threre are 3 types of store boughten yeast., depending on which one you are employing yeast is totaly disabled between 135 to 140 degtees.

    Patty I am assuming you are using ACTIVE dry yeast...the sort that comes in a packet. All you need is water that is 100/105,degrees. You can use hot tap water for that no need to heat it. Patty if you can buy INSTANT yeast just mix it in with the flour & your done with it.Easy enough.
