    Fall Bake Along Challenge #1

    The first challenge for our Fall Bake Along will be Flatbreads. This would include pita, naan, sandwich thins, crackers, to name a few. I am sure there are others. Pick a recipe, make it, post pictures of the finished product (and in process pics would be fun, too). Tell us a little about your experience making it, ask questions if you have any, and most of all.....have fun!

    There are no rules. You can use an on or off-site recipe, but if you choose off-site please post a link to the recipe or post the recipe to the database. I will be posting a new challenge every Friday, but that doesn't mean you can't post on the previous challenge after a new one starts. I want this to be fun and stress-free. If you want to make several recipes, that would be awesome too!

    Let's get baking!! Who will be the first to post???

    I found out what not to do real quick with this pita recipe: Sourdough Pita Bread.
    The recipe calls for pan cooking the flatbread on one side until it puffs. I flipped it and screwed it up. It tasted great but was flat. Next time I'll follow the recipe.
    I baked the others in a 500F oven for about 5 minutes till it was slightly browned. The puffing occurred after 3 minutes and the extra baking "set" the puff. I had to press to collapse the bread after cooling which left me with really good pita pocket bread.

    Wow, you didn't waste any time getting with the challenge! Your pitas look great. When I read that recipe yesterday I noticed that it didn't say to flip the pitas and cook the second side. I thought that sounded odd, and I probably would have done just as you did and flipped them. So, if you make them again will you bake or griddle them?

    Griddle a few (because I haven't really given the recipe's method a try) and bake the others, taking them out sooner than I did.

    I buy Naan bread easily in the supermarket in my area and was thinking about trying something with it. However during my search I ran across a scratch recipe video for it and am now confused LOL!. Naan bread to me is flat bread. But this one is clearly not?

    Hi and welcome. The naan I get at the restaurant has fairly large blisters often, I imagine because it is baked in a tandoor oven. These look like really large blisters, almost big enough to stuff, but I think it's a very thin layer of dough, and not a pocket such as you would get with pita.

    I hope you think of making these and then report back!

    Gosh, I've sure been missing these threads, how'd that happen??? At any rate, Donna asked me to post a photo of this Sourdough Flat Bread I made and I'm proud to do so, it was really great.
